Egg Roll Fried "Rice" in a Bowl

  What do you get when you combine Egg Rolls and Fried Rice in one dish? I thought you'd never ask! Why, Egg roll Fried Rice in a bowl, that's what! But wait, here's the exciting part.... what if I told you it's healthy, low carb and definitely not fried and there's no rice and no egg roll wrappers? I know, we've heard of Egg roll in a bowl before but this is a whole 'nother level. Yes, you read that correctly!! You can now have your 2 favorite Chinese takeout dishes combined in a quick and easy all in one pan meal in under 30 minutes! Here's how I did it: Ingredients: 4 cups (or 1 package) shredded coleslaw cabbage mix 2 medium onions sliced 1 cup matchstick carrots 1 1/2 pounds ground meat of choice (pork, beef, chicken or turkey) 2 tbsp EVOO (extra virgin olive oil) 3 large eggs (or 4 medium) 1 - 12 oz. Package Palmini Rice (see image following recipe) 1/4 tsp salt 1/2 tsp onion powder 1/4 cup soy sauce or liquid aminos 2 tbsp
