My youngest is celebrating a Sweet 16 and HOW sweet it is. He requested a Cheesecake Tiramisu Trifle and being #thatmom  #Iaimtoplease !

INGREDIENTS:

1 White Chocolate Raspberry Cheesecake Built bar, small chop

2- 12 oz Pound Cake, store bought

1 package Lady Finger pastries, sliced

6 oz Mascarpone Cheese, softened

12 oz fresh Raspberries, divided in thirds

4 oz Ghirardelli 60% Dark Chocolate baking bar, coarsely chopped

4 - 8 squares White Chocolate baking bar

2 TBSP Confectionary Sugar of choice, divided

1 pint heavy whipping cream

1 1/2 TBSP cheesecake pudding mix of choice

2-3 TBSP cold brew coffee


Directions:

In a large mixing bowl add heavy whipping cream, 1 TBSP confectionary sugar of choice and cheesecake pudding mix. Using a mixer, Whip on medium until starts to thicken. Increase to high and continue whipping until stiff peaks form. Set aside.

In a medium bowl add mascarpone cheese and remaining TBSP of confectionary sugar.

If you cannot find mascarpone, substitute with cream cheese.

Mix medium 1-2 minutes. Using a spatula, gently fold mascarpone into your whipped cream until combined. Set aside.

Coarsely chop your dark chocolate bar. You can opt to use chocolate chips if you prefer.

On a separate plate, coarsely chop 2 white chocolate squares, setting aside remaining squares for garnishing.

Slice pound cake into 1" thick slices. Next cut into 3 "cake sticks" then cube.

In a trifle dish, add a layer of cake pieces being sure to fill your edges and center.

Top with 1/3 of your whipped cream mixture. Add 1/2 of your dark chocolate followed by a layer of fresh raspberries.

Repeat step. Cake, cream, chocolate and raspberries.

If your lady fingers are not pre-sliced, slice them in half lengthwise.

Pour your cold brew coffee into a shallow dish and quickly dip the cut, flat side of your lady fingers one at a time. Be careful not to leave it too long or it will soak the pastry and make it soggy.

Place each lady finger around the edge of your trifle dish vertically.

Add remaining layer of cake followed by remaining whipped cream. Garnish with fresh raspberries, chopped White Chocolate Raspberry Cheesecake Built bar, chopped white chocolate pieces and finally, a few white chocolate squares.

Serve in your favorite dish. Dig in with a spoon. And as always, ENJOY!
