Egg Roll Fried "Rice" in a Bowl

 


What do you get when you combine Egg Rolls and Fried Rice in one dish?

I thought you'd never ask! Why, Egg roll Fried Rice in a bowl, that's what!

But wait, here's the exciting part.... what if I told you it's healthy, low carb and definitely not fried and there's no rice and no egg roll wrappers? I know, we've heard of Egg roll in a bowl before but this is a whole 'nother level.


Yes, you read that correctly!! You can now have your 2 favorite Chinese takeout dishes combined in a quick and easy all in one pan meal in under 30 minutes!

Here's how I did it:

Ingredients:

4 cups (or 1 package) shredded coleslaw cabbage mix

2 medium onions sliced

1 cup matchstick carrots

1 1/2 pounds ground meat of choice (pork, beef, chicken or turkey)

2 tbsp EVOO (extra virgin olive oil)

3 large eggs (or 4 medium)

1 - 12 oz. Package Palmini Rice (see image following recipe)

1/4 tsp salt

1/2 tsp onion powder

1/4 cup soy sauce or liquid aminos

2 tbsp ginger paste

1-2 tbsp rice wine vinegar

2 tbsp minced garlic

1 tsp fish sauce

1/4-1/2 tsp siracha (optional)

1/4 tsp red chili flakes

1-2 tbsp sesame oil

Toasted Sesame seeds to garnish

2 green onions chopped for garnish (optional)


Directions:

On medium High heat, heat your skillet. Add your EVOO and ground meat, salt and red chili flakes. Brown through about 5-6 minutes.

Add onions, carrots and cabbage mixture and onion powder.  Stir til combined. Let cook 8 minutes, stirring to distribute.

In a colander, rinse palmini rice, drain and add to pan. Mix to combine.

In a small bowl, combine soy, fish sauce, ginger, garlic, vinegar and siracha (optional) and incorporate. Pour in pan and stir. Continue cooking, allowing "rice" to heat through and some of your liquids to evaporate.

Move mixture to one side of your skillet, leaving about a 1/4th of your pan empty. Add your eggs. Let cook partially through. Stir eggs to mix and then incorporate throughout your skillet mixture.

Remove from heat.

Drizzle with sesame oil.

Spoon into your favorite dish, garnish with a sprinkling of sesame seeds and green onions and dig in.
