Easy Peasy Low Carb Chicken No Lo Mein

 


Ingredients:

1 pound ground chicken

2 cans Palmini linguine (or angel hair) noodles, drained

3 cups broccoli florets (fresh or frozen)

2 large onions, sliced

6 large free range organic eggs (fried or boiled, your choice)

1 tsp chicken bouillon

2 tbsp minced garlic

2 tbsp ginger paste

1 Tbsp siracha

1-2 tbsp liquid aminos

1/4 cup peanuts, roasted and unsalted

1 Tbsp extra virgin olive oil (EVOO)

1 tbsp sesame oil

Dash of salt and pepper

Pinch of red chili flakes (optional)


Directions:

Heat a large skillet on medium high heat. Add your EVOO and sliced onions. Cook for 4 minutes.

While your onions are cooking, add your broccoli to a microwave safe dish and cook 4 minutes for fresh or 5 minutes for frozen. For this recipe, I used frozen. If you don't have or do not desire to use a microwave, toss in a small skillet and cook several minutes until no longer frozen or al dente. 

Add your ground chicken, cooking for 5 minutes.

Add broccoli, garlic, ginger, liquid aminos, salt, pepper, red chili flakes, sesame oil and siracha.

Stir to combine.

In a small ziploc bag, add your peanuts. Seal, removing all of the air and using the flat side of a meat tenderizer (or use a rolling pin or whatever you have (except glass) to crush your peanuts. Be sure you are on a flat surface such as a cutting board, counter top or a sheet pan (do not do this on a glass or breakable surface), bang on the peanuts until thoroughly crushed to desired size. Don't go overboard, we're not making peanut butter

Drain your Palmini Noodles. You can use angel hair or linguine. I used 1 can of each because, well, that's what I had in the cupboard.

Toss in your Palmini Noodles and peanuts, reserving a tbsp or 2 for garnishing.

Toss to combine and turn down heat to medium. Let cook until your eggs are finished (if frying. If boiling, you will want to start your eggs at the same time you start your onions. Frying is much quicker though) then remove from heat and serve.

Garnish with a fried egg and a sprinkle of crushed peanuts.
