Creamy Palmini noodles with chicken and BACON!

 



So there's this recipe trending lately all over social media. I decided to whip up a different version today, using what was on hand!

It's simple, easy, quick and oh so delicious!


Ingredients:

1 - 8 oz block of cream cheese

6 roma tomatoes, medium diced       

3 cups of broccoli

2 boneless skinless chicken breasts 

4 slices of bacon, diced 

1 TBSP extra virgin olive oil (EVOO)

1/2 tsp black pepper

1/2 tsp red chili flakes

2 tbsp Primal Kitchen avocado oil Ranch dressing

1-2 TBSP Texas Pete hot sauce (or hot sauce of choice)

2 TBSP minced garlic 

1/4 tsp dried dill weed


Directions: 

Preheat oven to 375°F

Dice Roma tomatoes, medium dice.

Add block of cream cheese to a baking dish. Surrounding cream cheese with tomatoes. (See image below)

Drizzle with EVOO, salt, pepper, Badia complete seasoning and Minced garlic.

Set dish aside.

Chop chicken breasts into bite sized pieces, about 1/2". 

Chop bacon into small bite sized pieces.

To a medium sized mixing bowl,  add chicken, bacon, dash of salt, pepper, Badia complete seasoning, texas Pete hot sauce and avocado ranch dressing. Mix to combine.

Line a shallow baking pan with parchment paper. Spread chicken mixture in a thin layer on your pan.

Add both pan and dish to your oven.

Bake simultaneously 20-30 minutes, stirring your chicken half way through.

Drain and rinse your Palmini angel hair noodles,  set aside.

In a heated skillet, medium-high heat, toss broccoli with a drizzle of EVOO, dash of salt and pepper. Stir every couple of minutes until desired doneness. About 10 minutes.

Once your tomato mixture is done, cheese will be soft. Stir with a spoon to combine. To your same baking dish, add chicken mixture, broccoli and Palmini noodles. Stir to combine.

Garnish with red chili flakes, dash of salt to taste and dried dill.

Serve and Enjoy!
