Pork Ramen with Miracle Noodles




I absolutely love ramen 🍜.  So does my family. We used to purchase large boxes of Korean noodles from the Asian market. But because we no longer consume pasta, rice, breads and starches, we have to come up with low carb, keto versions of our favorite dishes.

Which brings me to the star of today's recipe....Miracle Noodles, angel hair style noodles!

If you have not tried these yet, then you're really missing out on a tasty, quick and easy to use ingredient. And 1 package contains 2 - 3 oz. Servings that have only 5 calories per serving and 3 total carbs (1 net carb, 0 sugar).

I can see my pantry shelves fully stocked to the max with these noodles.

So tonight I have created a tasty, hearty dish that will knock your socks off! And trust me, this dish is better than anything you've ever tasted! Especially if you live ramen 

Serves 4

Cook time: 20 minutes 

 Prep time: 10 minutes

Ingredients:

2 - 7 oz. Packages of Miracle Noodles Organic Spaghetti style noodles, drained, rinsed

1 - 2 lb. Package Thin sleeping ced Center cut pork loin

1  - 26 oz container Japanese Inspired Ramen Soy Ginger Chicken Broth

24 oz. Chicken Broth

2 TBSP minced garlic

2 TBSP minced Ginger

1 leek, sliced and rinsed

5 large bok choy leaves, rinsed and chopped

1-2 tbsp liquid aminos

1 TBSP siracha (optional)

2 tsp Badia Everything Hemp Seasoning

1 tsp black pepper, divided

1/2 tsp pink himalayan salt, divided

1 TBSP EVOO

4 free range large eggs

1 TBSP white vinegar


Directions:

Place leek into 1/4" thick slices. Place in collander and rinse well. Using your fingers, continually toss leek slices under running water until thoroughly rinsed, clean of any dirt. Drain. Transfer to a bowl.

Rinse bok choy under cool water. Remove 1/4" from bottom stalk of bok choy. Slice into 1/4" slices.

Trim fat from pork (optional), cut pieces in 1/2 or 1/3's. Season both sides of pork with Everything Hemp Seasoning, black pepper and salt.

Fill a medium sized pot 1/3 of the way with water and add in a TBSP of white vinegar. Place eggs in water, making sure the water covers your eggs. If not, add a bit more water until your eggs are completely covered. Cook until water starts to bubble but not boil. Remove from heat. Pour out hot water, cover with fresh cool water and a bit of ice. Let eggs cool. Then peel. Set aside.

In a heated skillet over medium high heat, drizzle pan with EVOO.

Place pork in heated skillet, cook 3-4 minutes and turn over. Continue cooking another 3-4 minutes.

Remove pork from pan.

Add your leeks, bok choy, ginger, garlic, dash of salt and pepper and 1/4 tsp everything hemp seasoning. Stir well to combine, allowing the leeks and bok choy to soak up any remaining pork juices/fat.

Open your Miracle Noodles packages and pour into your collander. Give the noodles a quick rinse. Allow to drain.

Turn down your heat to medium. Add your ramen broth and chicken broth to your pan. Let cook 5-7 minutes or until veggies are cooked to desire doneness.

Add your miracle noodles and cooked pork pieces to your pan. With heat still on medium, cook your ramen soup for 5 minutes, to allow your miracle noodles to heat through.

Dish up your ramen soup into your favorite bowl. Add your pork pieces on top to one side. Slice one soft boiled egg in half and place beside your pork.

Serve and Enjoy!
