Keto Chaffle Bread

Today for dinner, we had Dr. Prager's California Veggie burgers for dinner. So my much used Mini Dash waffle/chaffle maker came in super handy to make the perfect bun.
Here's my version that makes a nice, soft, yummy bun to satisfy all of your keto bread desires and makes 8 chaffles. Perfect for a family of 4 or make them up and freeze them to pop in your toaster oven for your next breakfast, lunch , dinner or snack.
Ingredients:
5 large eggs, beaten
3 TBSP Almond flour
1 tsp baking soda
4 oz shredded, mozzarella cheese (or use your favorite)
A dash of seasoning of choice (I chose cajun seasoning, or onion powder, or Badia Complete seasoning)
Directions:
Spray your mini Dash waffle maker with non stick spray. Using 1/4 cup, scoop your mixture and pour evenly in to your mini dash. Close lid and allow to cook until the light turns off, about 3 minutes and repeat until all of your mixture is used.
If a browner or crispier texture is desired, cook an additional minute or until preferred doneness is reached.
Allow to cool and store unused chaffles in a ziploc or freezer safe container for later use.
Use for sandwiches, grilled cheese, PB&J, or top with butter of choice and maple syrup, fresh fruit, whipped cream or almond butter.
