Greek Nachos (not low carb, sorry)

 



My favorite food in the world just happens to be Greek and Mediterranean. And we love Gyros the most. We also love nachos, I mean, who doesn't? So I have combined our most loved foods into a quick and easy meal.

Yes, I create and post quite a bit of low carb, keto friendly dishes. But once a week, we add a bit of carbs. You could use low carb tortillas or make a keto pita/flat bread recipe of your choice. But for this recipe, we've gone all out carbalicious!

This recipe serves 8 easily and takes less than 30 minutes from start to finish.

I hope you enjoy this recipe as much as we do and will decide to add it to your family's menu rotation.


Ingredients:

24 oz ground pork (you can use beef, pork, chicken, turkey or lamb)

1 3/4 tsp onion powder

1 tsp black pepper

1 1/8 tsp pink himalayan salt

1 TBSP + 1 tsp Minced garlic

1 TBSP + 1/2 tsp EVOO (extra virgin olive oil)

1 3/8 tsp Badia complete seasoning

3 small cucumbers

3 Roma tomatoes

1 medium onion

1/3 cup Stonyfield Whole milk organic probiotic plain yogurt

1/2 cup full fat sour cream

1 package Touyafan Whole Wheat Flat Bread (5 flat bread rounds)


Directions:

Preheat oven to 350°F. Stack your flat bread, cut in half then slice into a total of 8 triangles. Drizzle with 1 TBSP olive oil, 1/2 tsp. Onion powder, 1/4 tsp each of salt and pepper and 1/8 tsp badia complete seasoning. Using your hands, toss to coat. Place in oven for 10-15 minutes.

In a skillet on medium high heat, brown your ground pork. Half way through cooking, add 1 tsp onion powder, 1/2 tsp each of salt, pepper and 1 tsp of badia complete seasoning. Mix to combine and continue to cook until no longer pink and golden brown. Add in 1 tbsp minced garlic, stir. Remove from heat.

Wash your cucumbers. No need to peel, but you can, your preference. Using a grater, finely grate each cucumber into a medium sized bowl. You will have roughly 1 1/2 cups of cucumber once shredded. Add a dash of salt about 1/8 tsp) and mix to combine. Let sit for 5 minutes. This will help to bring out excess moisture. Lay out several paper towels or use a clean kitchen towel and dish out your cucumber onto towel. Encase cucumber in towel, twist and squeeze to remove excess moisture. Drain any excess liquid in bowl. Add cucumber back to bowl. Adding 1/2 cup of full fat sour cream, 1/3 cup of Stonyfield Whole Milk Organic Probiotic yogurt, 1/4 tsp each onion powder, salt, pepper, badia complete seasoning and 1 tsp minced garlic and 1/2 tsp EVOO. Stir to combine. Set aside.

Dice roma tomatoes, medium dice. Place on a medium sized serving platter or large dinner plate.

Chop and dice onion, small dice. Add onions to serving dish, placing next to tomatoes.

Next, Roll up Romaine lettuce leaves and finely chop into ribbons (chiffonade) and place  on your dish with tomatoes and onions.

To assemble, arrange flat bread on your dinner plates, about 5 pieces.  Add 1/3 cup (3 oz.) ground pork to your plate, top with 2 TBSP romaine lettuce, 2 TBSP diced tomatoes, 1 TBSP diced onions and 2 TBSP of tzatziki sauce. Garnish with a tablespoon of feta cheese crumbles.
