Best Ever Creamy Spinach and Chicken

 


3 boneless skinless chicken breasts

8oz cream cheese

1 packet of Onion Soup mix

4 oz bacon, crisped 

10 oz frozen chopped spinach

1/4-1/2 tsp red chili flakes

1/2 tsp dried dill

4 oz Shredded Cheese. We like Pepper jack or extra sharp white cheddar

Cook in Instant Pot (or can do crockpot on high for 4 hours or low for 6-8)

Combine all ingredients except shredded cheese in to your pressure cooker (or crockpot) If using an instant pot, set to Chicken/Meat.  Allow to cook and decompress naturally. Once done, shred your chicken in the preferred cooking pot. Use 2 forks, it's easier this way.  Stir to combine. Fold in shredded cheese and stir to combine. Serve with  low carb tortillas or fresh cut veggies (celery, bell pepper, or mini sweet peppers)
